Roasted Vegetables

We are in love with roasted vegetables.   Preheat your oven to 400 degrees, coat the vegetables lightly with olive oil, spread them on a sheet pan lined with parchment paper.  Do not crowd them.   Bake about 20 minutes or until they brown lightly.  Take them out and salt them with some nice salt.

This is a really good way to pre-cook veges for freezing as well.
